Coconut Date Balls with Lion Desert Queen Dates

Coconut date balls are a simple, tasty, and healthy vegan recipe that are made with dates, nuts, and shredded coconut. They're tiny balls of nutrition!

  • 2 eggs, beaten
  • 1 cup white sugar
  • 1 cup chopped dates
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 3 cups crispy rice cereal
  • 1 cup flaked coconut
  1. Combine the beaten eggs, sugar, and dates in a medium size saucepan and heat it over in moderate heat. Bring it to a boil for 5 minutes, make sure to stir occasionally.
  2. Once boiled remove it from the heat and add the butter and vanilla extract and stir well.
  3. Add crispy rice cereal to the mix.
  4. Butter your hands and roll the mixture into walnut-sized balls. Finish it off by rolling the balls in coconut
